"I have long said how expressive cabernet from the Vale can be. Despite the heat the varietal postcode is undeniable: the maritime salinity, attractive. This is no exception. Svelte and compact, yet copious all at once. Sumptuous aromas of crushed blackcurrant, mint, clove, bay leaf, sage and olive. The tannins keep everything in check and running with a smooth precision. Depth, length, finesse and oomph. A very fine wine."

Tasting Notes

Produced from the 70 year old vines at our Ingoldby Road vineyard, our Inc Cabernet Sauvignon is the sibling to our Inc Shiraz. The berries are small and concentrated, with intense colour, flavour and structure. Open fermentation with extended skin contact is employed, with maturation in 100% French oak (25% new) for 18 months. A selection of only the best barrels make the cut to the final blend.

In the glass this Cabernet Sauvignon has an inky depth of colour. The nose offers blackberry, cassis, and black olive notes with just of hint of capsicum. The palate exudes these dark fruit characters, with spicy toasty oak supporting the intense fruit. The depth and intensity of this wine is complemented by the balance and elegance in this seriously concentrated Cabernet Sauvignon. The provenance of the old vines at our Ingoldby Vineyard are truly present in this beautiful example of McLaren Vale Cabernet.
